This workshop is designed to provide participants with the knowledge and skills to process cod. The focus of the workshop is on the trimming of machine cut fillets but some individuals will be given separate training on the filleting and splitting of cod.

Learning Outcomes

This course aims to enable workshop participants to gain the
knowledge and develop the skills necessary to safely trim cod fillets or
split and/or fillet cod fish manually.
Participants will be able to:
• Briefly discuss personal hygiene requirements as outlines by CFIA's
(Canadian Food Inspection Agency) Fish Inspection Regulations.
• Outline a basic understanding of the skeleton structure as it relates
to the potential location of defects.
• Apply proper knife handling skills and safe handling practices.
• Apply and demonstrate best practices in the trimming of cod fillets or
the manual filleting and/or splitting of cod.
